Made this fish curry Saturday, and if I may say so, it was out of this world. Serve with naan or paratha really rather than rice.
Serves four to six
Some vegetable oil
1 tbsp yellow mustard seeds
1 large onion, finely chopped
3 cloves garlic (crushed)
About 15-20 dried curry leaves
1/4 tsp cumin
1/2 tsp chilli powder
2 tsp ground coriander
2 tsp turmeric
1 x 400g can chopped tomatoes
100ml (3/4 jar) tamarind paste
2 green chillies, each sliced lengthways into six pieces, with seeds and stalk
1 tsp salt
700g of monkfish or dense white fish, cut into 5cm chunks/cubes
Heat the oil in the wok or heavy-based saucepan over a medium heat. When hot, add the mustard seeds and fry for 30 seconds, then stir in the onion and garlic and fry gently for about 10 minutes until softened and lightly golden. Add the curry leaves, chilli powder,cumin, coriander and turmeric and fry for two minutes, then stir in the tomatoes, tamarind paste, green chillies and salt and simmer for about 10 minutes until rich and reduced.
Add the fish, cook for a further five minutes or until just cooked through.
Sounds good. Dropped it in the OP, and realised how long it is since I updated that. Need to have a trawl through the currently eating thread when I have some time, to see what I've missed.
Method
• Mush together the beef and seasoning.
• Make a patty.
• Refrigerate.
• Cook.
• Fry pepper and onion.
• Add salsa.
• Toast bun, spread on creme fraîche, sprinkle on grated cheese.
• Assemble.
• Eat.
Coke provides almost all of the spices, so there's not much else to do.
Ingredients
About a litre of Pepsi max, enough to completely cover the wings
Let's say 20 chicken wings
4 Spring onions
A thumb size bit of ginger
A handful of whole Szechuan pepper corns
2 tablespoons of soy sauce to taste
Chilli flakes to taste (not essential)
Method
Slice the ginger (no need to peel), and put everything except the spring onions into a big wok and cook until the coke has reduced to about half. This will depend on the heat you use, but it usually takes about an hour. Chop the spring onions and throw them in, cook for another 10 minutes and serve.
You're only really supposed to eat the chicken, but the coke sauce is absolutely yum on rice.
