Got some coals and chunks of mesquite wood white hot, then grilled it at the hottest possible temperature. I did 2 mins, flip, 2 mins, flip, 1 min, 1 min, 45 seconds, 45 seconds using a timer. All that’s on it is a touch of oil and lots of maldon sea salt and pepper.
