This was with lemons, a bit. Some thyme and olive oil on the outside. Seasoning. Chunk of lemon inside, some more bits of lemon in the tin. Strips of bacon on the top is also good, but didn't do it this time. Roll a lemon on the worktop to loosen up the inside (of the lemon), chop in half, shove both halves up bum (chicken's).
Crush a garlic bulb with the flat of a large life, send it the same way as lemon.
In a preheated roasting pan lay down 5 or 6 celery sticks to make a ladder shape. Place rosemary and Sage either side.
Put the chicken on celery and put in the oven.
The point of the celery is to prevent the chicken swimming in liquid while also adding flava to the eventual gravy.
Follow the cooking instructions on the pack (something like 45 minutes plus 20 minutes per kg iirc).
For the last 5 - 10 minutes remove the chicken and place on another tray, either whack the heat up or switch to the grill to crisp up the skin. You want to be watching like a hawk at this stage.
Take out when the skin is crispy and let rest with some foil on top.
Use this time to reduce the grazy on the hob using the roasting pan.

I sort of invented it drunk and then simplified it for the forum, although all recipes are revisionist I suppose and pork and fennel seed is a classic pairing.
