After baking (approx 2hrs), you pierce the top of the cake with a skewer in several places, then pour brandy (or rum, whisk(e)y) over the top allowing it to penetrate into the cake. Repeat after X days. I leave it a fortnight between feeds.
I use a James Martin recipe for the cake.
