Turkey legs boned, skinned, stuffed with fruity stuffing and rolled up in bacon pre cooked ready to fry off on the day. Pigs in blankets rolled. Gravy made and in the freezer.
That was one of the best Xmas meals ever, particularly because I hate food waste. Everything was portioned out and not overloaded.
Starters - above valvona and crolla board. Based on a suggestion from Jay Rayner to not faff with a starter. For five of us, that was perfect.
Mains - venison casserole with mashed potatoes , red cabbage and kale. Again, just a nice plate sized amount. Better to plate up than to have the pots at the table.
Dessert - tiramisu, very boozy.
Cheese board - obv
There's very little left overs and I'm happy with that.
Smoked mackerel pate sounds astounding. Smoked mackerel is among my most favourite-ist of foods nowadays.
We got our butcher to bone the turkey legs for us. Wifey usually does a meat stuffing with those but with time limits this year we just got the butcher to stuff them for us so it was a basic one - very good all the same.
Frying the legs eh? Wifey roasts them separately on the oven. Frying might be better to avoid over-doing.
We have a mountain of leftovers but that is one of our favourite things about this time of year.
Home made pudding and cake yesterday left no room for the cheese. Will fit that in before the weekend. Have a few bottles of port and an interesting chutney for that.
That beef. Would make a monocle pop out that would.
One tub of creamed cheese
One pack of smoked mackerel (about 4 fillets)
Dribble of double cream (to get the consistency you want)
Desert spoon of horseradish sauce
Finely chopped flat leaf parsley
Juice of half a lemon
Good crack of black pepper
Picked up a box of candied fruit. Just tried a piece - very chewy and tasty. I suspect that fruit flavoured jelly / chewy sweets are a copy of this. It's real pieces of fruit candied to within a inch of their existence - having a sugar deposit on the skins in some instances.
