I don't know how much of a rush you are in to get it built, but you may want to hold off until the end of this month, at least for the CPU. Details on the next generation of Ryzen will be released in a week, and the first of the actual processors could be out by the end of the month/November. For your purposes a Ryzen CPU will be ideal, more cores and better multicore performance than Intel for the price, and much better power consumption relatively, which also means lower cooling requirements. The PCIE setup is better with the AMD X570 chipset too. Rumours and other details indicate that the next AMD gen (Ryzen 5000) will be a beast, 3000 was already excellent for editing and general productivity as well as being very close to Intel for gaming.
You should get much more RAM IMO if you want to do video stuff, at least 32 GB, and I would aim for 3600 MHz speed.
GPU situation is tricky right now what very low availability of the new stuff, I guess the best bet would be to put in a back order for a reasonable price.
I would recommend a case with decent airflow, particularly if you are going for high end parts that will be kicking out a lot of heat. I'll have a look at some of the best options a bit later.
